Fajitas Stef and Todd Style

These fajitas have become a staple on our monthly menu because they include some of our very favorite ingredients.

This is how we do fajitas. I welcome any additions, edits, variations you think we should try!


Stef and Todd's Fajitas

Ingredients

1 pound strip steak or 2 chicken breasts, marinated
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
1 onion
Little bit of olive oil
Salt & Pepper to taste
2 avocados
2 tomatoes
2 limes
bunch of Cilantro
Sour Cream
Shredded Cheese
Uncooked tortillas (Costco has them, and they're the best!)
Beer (we like Bud Light, but any tasty, light cerveza will do)


Procedure

Cut the peppers and onion into strips and saute with a little olive oil over medium-to-high heat.

Grill meat of choice (we get cheap strip steak at Costco and it can last us 4+ of these meals, but sometimes I want chicken and we just cook up 2 breasts). Todd marinates the meat in a citrus lime marinade usually, grills it, and cuts it into strips.

Cut the two avocados and two tomatoes into little cubes. Place in bowl with handful of chopped cilantro and the juice of one lime (I heat the lime in the microwave first for 15 seconds to get the most possible juice out). Combine, and place mixture into a super cute little avocado-shaped bowl (if you have one, like we do) or a plain small bowl will do. Enjoy dipping a few tortilla chips in the mix while you wait for the meat and/or pepper mixture to cook (but save some for the fajitas)!!

Chop some more cilantro, grate some cheese, cut the other lime into wedges.

Cook 4-5 tortillas towards the very end, when everything is just coming together. Wrap in foil and serve warm in a basket for a cute Chevy's inspired touch.

Put all ingredients out on a table (we enjoy our coffee table...ha!), with a beer, and enjoy creating the most scrumptious fajitas EVER (that we've tried so far, at least).
